The service indicator on my E65 shows 18000Kms for it's first oil change. I think that's way too long. Can I service my car now? And can I use the castrol SLX (0W-40)with my E65? 740Li.

if the car is leased for a duration shorter than the warranty period just let BMW do it when the indicator calls for it. If you own the car then I would probably change the oil well before 18k miles. Apparently BMW will do an oil change at least once a year free for owners who do not run up enough miles to require an oil change via milage anyway.

with viscocity rating of 0W-40? They say the oil is too 'thin' for the big engine and that there is a risk to the piston heads

This is not a good place to get "creative" - I have no idea what the spec is for your engine but I would not try a weight not listed in the manual. The recommended oil weight will be in your owner's manual.
