Check the connector on the coolant temp switch.
It maybe bad or the sensor is bad. Does everything else in the cluster work normally? Mine does the same thing but the needle will drop when I turn the car off. Does not do it all the time but scares me when it does it.

A lower temperature thermostat opens at a lower temperature therefore that is what you want to make the engine run cooler. Can't remember if the stock thermostat is 70 or 80 degrees.
However, no matter what thermostat you have, the engine may overheat. As far as I know, all 02s overheat. The best solution for overheating is a 320 radiator, which is easily adpated to an 02.

Heater valve should be open when filling cooling
system & have the front of the car up on jack stands to help burp the air out of the system, idle engine w/cap off & watch rad water level.
