How much performance is given up with A/S tires?

Time to replace the tires on my '03 M5 (came with Toyo Proxes T1-S's). I plan to buy a dedicated winter tire/rim setup later this year for the heart of the snow season. However, for the rest of the year, I'm considering performance all season tires instead of high performance summer tires. I figure for the transition between Fall and Winter where I can get dustings to a couple inches of snow and similar snows before Spring, all season tires may be a decent compromise to minimize the amount of time I have to deal with winter tires. It comes down to how much performance do I give up during the summer months. I do drive aggressively (but not to the limit)with no more than a couple DE events a year so there's a limit to how much I'm willing to compromise.

So what's the combination I should go with; Summer set and Winter set or Performance All Season set with Winter set?

Your thoughts on the options would be appreciated.
