its politely called de-veining and takes away all the crap you refer to - BTW we call them prawns because shrimp is the wrong decription when they are longer than your hand and an inch and a half thick.

If you can't get them raw, they should be a beautiful orange colour when cooked. A good prawn should be firm to squeeze, the shell should be scaly, and it should smell fresh. First you rip off the head in a circular movement, then you pinch the tail and pull off the end section, then you grab all the legs and remove them. The shell should then peel off easily.

You should also have a selection of sauces to dip him into - the normal cocktail sauce is de rigeur, but I also like lemon & myrtle, chilli & lime and spicy tartare.

As I mentioned earlier, a dozen oysters from Wallace Bay is the perfect entree, but if this is not possible then use the prawns as an entree and make sure you have two or three Moreton Bay bugs - you've never tasted sweetmeat seafood until you've had one of these babies. Crab-like in appearance, you have to split the shells with the biggest cleaver you can find, but the taste is mind-blowing.

You won't know what sex with your partner is until you feed her this for lunch with a nice bottle of semillion blanc or dry white - I often used this meal as a leg opener with my dates as a young buck and if you have time to do the dishes before she lifts you up and runs for the bedroom, you've lasted longer than I ever did. Dining outdoors often led to even more interesting scenarios, and I've never doubted the claim that good seafood is an aphrodesiac.

When I lived in Germany, I was told that there were over 1300 breweries in FRG alone and my associates and I made it our business to try the products of each one...:-) We were thrown out of respectable places as well as some joints I wouldn't care to name publicly. Therefore my list is extensive, however...

Anyone that knows me can attest that "Diet Beer" isn't on my list of things to serve my guests nor consume myself.
